I can't find the option to turn on dictation so Siri can write my emails, my messages, and to respond in apps like whatsapp and other apps that require writing

Does anyone know if one microphone or the other is better for use when talking to Siri or doing dictation?

For the last couple days, my iPhone wouldn't dictate anything I say and Siri just keeps saying, "I'm really sorry about this..." I've had issues in the past but they would usually resolve themselves within a few minutes. The only thing I can really think of that's different is that I had AT&T change my iPhone number a couple weeks ago.
Or if not who would be the better resource, AT&T support or Apple support?

My curve won't let me write emails...I can receive them, but if I try to answer to an email I can choose the option 'answer' but then I don't have any 'send' button... if I try to send a new message, well I can write it and send it, but then it comes back with a red cross...<I was never able to send a mail.

My emails are being deleted after they are 7 days old and then when I scroll thru my emails it goes to weird dates with only 1 email there. Also, my texts are being deleted after only a few days...so frustrating!!! I have to be able to go back thru my emails. I went and looked at my memory thinking I was out of memory, but I have 3.0 gb of memory avaliable.

Whereas in the past (like even early this afternoon) I would be able to see emails or texts - or if no email or texts it would say 'No messages' - I cannot open either emails or text and therefore cannot create, read, or anything else. However if I am having her write an email or text message for me and I say something like "from Brian" she spells my name "Bryan." On rare occasion she will spell it correctly with an "i," which I can only surmise is due to some subtle difference in pronounciation.
Is there any way I can change her dictionary and only allow her to spell "Brian" and not "Bryan"? This isn't the only name she does this with; whenever I have her write "Colin" in a message she wants to put two L's in it instead of one.
