As I pluged my iPhone 3GS into a new laptop, I wrongly updated the newest iOS version into my phone. This causes a few content loses and the phone runs very slowly. How can I restore/recover the right iOS at my 3GS?

I would like to restore my jailbroken phone to normal, then re-jailbreak to get rid of a bunch of crap on it. When I click on restore from itunes, it says it will update my software to the newest version, 3.1.3 which I do not want. I want to stay on 3.1.2 so my phone is still able to be unlocked.Anyone know how to get around that, as in restore to factory without having itunes download and install 3.1.3?

After a reboot the white apple logo appears and then it just goes away.I figured out how to get the phone to into recovery mode so that iTunes can do a restore, but I am getting the message that says "Are you sure you want to restore the iPhone to its factory settings" All of your media and other data will be erased and the newest version of the iPhone software will be installed.
Is there any way to do a restore without allowing my iPhone's software to be upgraded to the newest version of iPhone software? I have 3.0 and want to keep it because I use my phone to tether. During the restore phase is there a way to cancel the portion of it that attempts to upgrade my software to the latest software?
before i updated my software yesterday i backed up all my contacts, messages etc, however after the update i dont have the backup and restore app in my menu and when i try to download it, it wont install after the download fom m.sonyericsson.com/backup.

I did the routine manual backup to iTunes (not iCloud) from my old phone before I gave it up to Apple and then restored that backup to the new phone but the photos don't seem to be appearing.
Keep in mind these are photos I only shot on my phone, I never imported them into iPhoto and I last remember having Photo Stream turned off. I thought doing the routine backup in iTunes automatically backs up everythingon the phone including photos. My phone is running iOS 7.1.1. I really hope they're not gone forever. Is there somewhere in my machine (mid-2012 MBP, OS X Mavericks) where they're hidden?

i initiated and ios upgrade to 5.1.1 from my phone b/c it said it was already downloaded... after i kicked it off, it says i needed to connect to itunes.. however, it then said i was in restore mode.. after downloading the 800+gb download... it only gave me the option of restoring from an old restore... i thought since it said downloaded, the phone only need to update files and not the entire os. therefore i didnt perform a backup first.

I picked up my phone last Sunday morning and it said it was disabled and needed to be plugged into itunes - I did this and it reenabled the iphone but all my data is now hidden...it was not set to erase if password entered wrongly too many times. I had the phone set to backup to iCloud, and ran a sync operation before updating.Does that not also create a backup?When the restore process began, it asked if I wanted to set up as a new phone or restore from backup. However the list of available backups did not have anything from today.The last one listed was from October 2011.So I cancelled that operation, went through the new phone setup and then it asked if I wanted to restore from iCloud.
