I deleted a very important message. It was an iMessage and not a traditional text message. Is this recoverable? I'm willing to go to a data recovery service if that's necessary.

I had to reset my phone this weekend and lost all of my text messages due to not backing up to icloud for an extended period of time. I'm attempting to get my contacts back in order and have been using my AT&T detailed bill to get some old numbers but the phone numbers associated with text messages sent via imessage are not showing up. i deleted messages from my partner on accident i would like them back... however upon following the instructions on the interent i think i may have deleted my back ups (in itunes edit>preferences>device>delete backup and did that cause i thought it was the last back up it would delete, thus allowing me to back up from the second to last one.... it however did not) can i get the messages i sent to them by using my partners back ups? or mine? or are they gone forever?

I updated my iPhone to iOs 5.1 recently. I share my account with two other people and when i was restoring my contacts another person's contacts went on my phone. I need to view a few texts that were deleted from my iPhone 4 (iPhone has not been synced since text was deleted).
how I would accomplish this through backing up my device? From what I understand, if you backup your device, deleted texts are included in the backup file. If I were to restore my iPhone using this backup file, would the previously deleted texts now show back up on the phone? This is the part I don't fully understand.
