i want to uncheck "encrypt local backup" option in itunes i.e. i don't want backup to have password. How to do this.and I do remember the existing backup password so that's not the problem

I got a new phone and set fingerprint password. It didn't really work so I got rid of it and just used a PIN. Now that I got my scanner fixed I want to use it again but it needs the backup password which I don't have. I tried scanning my finger and it didn't work. It will not let me scan again and is asking for the backup password for it to be able to open. I am not locked out of my phone rather I just need the backup password to change some settings. I would like to know if there is a way to reset the backup password without resetting my phone and keep in mind I am not locked out and still have full access just not the backup password? I have tried android device manager also the samsung one and cannot seem to find it. I do not want to reset my phone and am rooted.

Last night I did a manual backup of my iPhone 4S to my computer (Windows 7). I proceeded to restore my phone, and then restore from backup, only to be prompted with a message that asked me for a password. I do not remember ever giving a password, so I made several guesses. I tried the password for the admin account on my computer, email passwords, Apple ID password...but did not succeed. I would also like to note that "Encrypt iPhone backup" is NOT checked on iTunes, and I did not just un-check it.Â
Is there a way of recovering my data from my backup? I would really like my notes, messages, and contacts back.
I want to remove the restrictions from my iPhone but I don't want to restore it because that would mean losing half of the things on my phone. I have already tried recovring the password using iPhone Backup Extractor but when I try to open the com.apple.springboard.plist file it shows up in TextEdit.

Returned home to restore my phone from previous backup made a day earlier and all of a sudden a password encryption was needed to access my last saved back up. Has anyone been able to negate this requirement affectively? And if so with a Mac?
